Marash Pepper which is known as "Maras biberi" in Turkey is another great tasting chili from that country. This chili is traditionally mixed with olive oil lemon juice and salt and used to season chicken lamb and goat dishes as well as vegetables. The marash flavored oil is also wonderful on pasta rice or salad greens. Marash Pepper has a mild to medium heat and a slightly fruity acidic flavor with musty earth-like undertones. Try sprinkling with ground fennel over a fresh citrus salad. It is also a wonderful seasoning all by itself on grilled beef poultry and fish. | A great tasting pepper!
