Potato Leek Soup is a favorite Irish recipe of mine. It is perfect for this time of year when the evenings are still quite chilly, and all you really want to keep doing is curl up on the couch with your favorite blanket, current Netflix binge, and enjoy some hot and delicious soup. 

If like me you prefer thicker, heartier soups, then you're in luck. This may become your favorite soup of all time.

Even better, if you're familiar with the Whole30 diet and want to keep your meals cleans, this recipe is Whole30 compliant!

What you'll need is:

  • 1 Chicken sausage (optional- for placing on top)
  • 1 Chives
  • 3 cloves Garlic
  • 5 Potatoes, medium to large organic
  • 1 1/2 tsp Thyme, dried
  • 4 qt Bone broth
  • Black Pepper
  • Sea salt
  • 4 Organic leeks (sliced and rinsed of sand)
  • 1/3 cup Fat to cook in (such as lard, coconut oil, tallow or ghee)
  • In a large soup pot, melt the ghee and add the potatoes and leeks with the salt.
  • Cook on medium for about 10 minutes until the potatoes are fork tender and the salt has drawn out the juices and sweetened the leeks.
  • Add the garlic and cook for 1 minute.
  • Add the bone broth and thyme and bring to a simmer for about 5 minutes.
  • Turn the heat off, and use an immersion blender right in the pot to puree the soup completely.
  • Add the salt and pepper to taste and garnish each bowl with chives, if you'd like.

Irish Soda Bread is another Irish staple, and really fun/unique bread to make for your friends and family.
