Cozy Fall Meals
Mixed Vegetable Soup: Serves 3-4
- 2 medium potatoes (peeled and cubed)
- 2 carrots (peeled and cubed)
- 1 zucchini (cubed)
- 1 onion (minced)
- 3 garlic cloves (minced)
- 14oz. vegetable broth
- 2 cups of water
- 2tbsp. Spice Hut Moroccan Seasoning
- Salt to taste
Sauté onion and garlic until golden brown. Add vegetables and Spice Hut Moroccan Seasoning and sauté another 5 minutes. Add broth and water, cover and simmer, until vegetables are tender. Add salt to taste.
Northwest Burgers: Serves 4-5
- 1lb. ground beef
- 1lb. hot Italian sausage
- 1tsp. fresh ground black pepper
- Sliced mozzarella cheese
- 2tbsp. Spice Hut Italian Seasoning
- Salt to taste
Mix ground beef, sausage, Spice Hut Italian Seasoning, black pepper, salt to taste, and olive oil in a bowl until fully combined. Let sit covered, in refrigerator, for 1 hour. Preheat grill to medium-high heat. Form meat into patties and cook on grill, flipping patties once, until cooked. After cooked, allow mozzarella cheese to melt on burger before placing on ciabatta roll. Top with your favorite condiments and toppings. Serve immediately.
Vindaloo Squash Curry: Serves 4-5
- 1 medium zucchini (sliced)
- 1 medium yellow summer squash (sliced)
- 1 medium yellow onion (sliced)
- 2tbsp. olive oil
- 2tsp. Spice Hut Vindaloo Masala
- Salt to taste
Over medium-high heat, add olive oil to large skillet until oil simmers. Stir in vegetables, salt to taste, and Spice Hut Vindaloo Masala. Cook for 5-6 minutes until lightly browned, remove from heat and serve hot.
Quick Shredded Chicken Tacos: Serves 4-6
- 2lb. boneless chicken breast
- 1tbsp. vegetable oil
- 1/2 white onion (minced)
- 15oz. tomato sauce
- 2tbsp. Spice Hut Taco Seasoning
- Salt to taste
Place chicken into saucepan and pour enough water to cover chicken. Bring to a boil then reduce and simmer until cooked. Remove chicken breasts, and using two forks, pull chicken to shred, set aside. In a non-stick saucepan, heat vegetable oil over medium heat. Stir in onions and Spice Hut Taco SeasoningSalt and cook for 3 minutes. Stir in chicken and tomato sauce and bring to a boil. Reduce heat to low, cover, and simmer until desired consistency, remove from heat and serve with your favorite taco fixings.
