Yield: 4-5 servings


  • 1 medium zucchini (sliced)
  • 1 medium yellow summer squash (sliced)
  • 1 medium yellow onion (sliced)
  • 2 tbsp. olive oil
  • 2 tsp. Spice Hut ® Vindaloo Curry
  • Salt to taste


1. Over medium-high heat, add olive oil to large skillet until oil simmers.

2. Stir in vegetables, salt to taste and Spice Hut ® Vindaloo Curry. Cook for 5-6 minutes until lightly browned.

3. Remove from heat and serve hot.
